Who doesn't love nachos? I was craving nachos the other day at 10am, and it dawned on me that I can make BREAKFAST nachos! They are delicious, and a great meal to make for brunch or to share with your family at home. I was thinking of a healthier, not quite traditional nachos, not quite chilaquiles type of meal here. What I love is that you can add bacon to this if you want, or even some crumbled sausage to make it more hearty. OR you can strip the eggs and make it vegan.
