BREAKFAST NACHOS

Who doesn't love nachos? I was craving nachos the other day at 10am, and it dawned on me that I can make BREAKFAST nachos! They are delicious, and a great meal to make for brunch or to share with your family at home. I was thinking of a healthier, not quite traditional nachos, not quite chilaquiles type of meal here. What I love is that you can add bacon to this if you want, or even some crumbled sausage to make it more hearty. OR you can strip the eggs and make it vegan. These are messy, so make sure to grab a few napkins. I included a step-by-step video on TikTok. ENJOY!

Breakfast Nachos

time: 15 minutes servings: any amount

INGREDIENTS:

  • tortilla chips
  • hardboiled eggs
  • 1/2 cup black beans
  • 1 cup chopped kale
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1tbs garlic
  • cheddar (I used vegan cheddar)‍

TOPPINGS:

  • pico de gallo or any salsa (optional)
  • avocado or guac
  • chopped cilantro

STEPS:

  • Make hardboiled eggs and set aside.
  • In a medium pan, sautee garlic, onions, kale, and bell peppers in 2 tbs of butter or oil.
  • Once eggs and veggies are done, set up a small sheet pan with tortilla chips. Then add your veggies, eggs, beans, and cheese in that order.
  • Pop the sheet pan in the oven for about 10-15 minutes at 350 degrees, or until cheese is melted.
  • From there, add your toppings and ENJOY!

VEGAN VERSION: Eliminate eggs and use vegan cheddar.
