GOAT & BEET TURKEY SANDWICH
Ok, I'm a sucker for a good sandwich. I felt like eating something light but also really satisfying, so I thought today was a good day for a sammie. I got everything in this sandwich at Trader Joe's, which I usually don't go to but I do love that they have a great variety of cheeses, and I LOVE goat cheese. This will be the fastest recipe I've ever posted, that's for sure. As always, I've included a step-by-step video on TikTok and this time, I made a vegetarian version below. ENJOY!
GOAT & BEET TURKEY SANDWICH
time: 10 minutes servings: as many as you want
INGREDIENTS:
- Any bread, I used sourdough
- Sliced goat cheese
- About 3 tbs Chevre goat cheese (soft)
- Any kind of turkey, OR eliminate if you're vegetarian
- Arugula
- Ready to eat beets
- Butter, OR vegan butter
STEPS:
- Put about 2 tbs of butter on a pan on medium to low heat.
- Add 2 slices of sour dough, and 1 slice of goat cheese on each slice of bread.
- The heat should be low enough for your bread not to burn, but also allow for your cheese to melt.
- Once your cheese is a little melted, add on turkey on one side.
- Add your beets to the other side.
- Add arugula on the turkey.
- Add the softened goat cheese on the beets.
- Put them on top of each other and press the sandwich down.
- ENJOY!
VEGAN VERSION: Eliminate turkey, double the cheese. You're welcome.
