GREEK YOGURT SPINACH & ARTICHOKE DIP
This recipe is SO versatile, I love it so much. I always try and make things that do great as leftovers, and consider this the thing you're going to want to put on everything if you don't finish it! You can obviously just have this as it is with some bread or some chips. But otherwise, you can top this on some chicken, fish, or pasta. GREEK YOGURT SPINACH & ARTICHOKE DIP
time: 40 minutes servings: About 3-4, depending on how you use it.
INGREDIENTS:
- 1.5 cups of thawed out frozen spinach
- 1 small container of full-fat greek yogurt OR plain vegan yogurt if you're doing that version
- 1 can of artichokes in brine
- 1/2 cup of mozzarella OR vegan mozzarella
- 1/4 cup of feta OR 2 cups of boiled cauliflower
- salt & pepper
- 1tbs minced garlic
STEPS:
- In a small bowl, mix everything above together. Make sure to rinse out any excess water from the spinach. You can do this by placing the spinach in a large napkin, and just squeezing it over the sink.
- If you're doing the vegan version of this, boil 2 cups of cauliflower in hot water. When its done, place it in a blender so it gets nice and thick, and then put it in with everything else.
- In an oven ready bowl, dump everything in there and bake for 30 minutes at 400. If your bowl is small, place it in the middle of a medium sheet pan, in case it boils over.
- When those 30 minutes are up, take it out and top with more cheese if you like, and then put it back in for 5-8 minutes, or until cheese is melted. ENJOY!
