SPICY ENDIVE CUPS

If you love salads, you'll love this recipe. It's satisfying, naturally gluten-free, and low-carb. These are basically lettuce cups, and you're welcome to use romaine or butter lettuce, but endive is just so crunchy and really delicious. This can definitely be a whole meal, or you can serve them as appetizers. The best part is that these can fit any diet because you can use any protein you want, and if you're vegan, simply take out the cheese. These are messy, so make sure to grab a few napkins. Spicy Endive Cups

time: 15 minutes servings: any amount

INGREDIENTS:

  • endive, or butter lettuce, or romaine
  • spicy hummus, any amount
  • any protein, any amount. I recommend salmon, shrimp, shredded chicken, or chickpeas.
  • chopped red onion, any amount
  • feta, any amount
  • buffalo sauce, any amount
  • chopped green onions or cilantro, any amount

STEPS:

  • Pull apart endive leaves from stem
  • With the back of a spoon, spread some spicy hummus onto each cup
  • Add any amount of protein to each cup
  • Top with onion, feta, buffalo sauce, and green onion.
  • ENJOY

VEGAN VERSION: Use chickpeas and eliminate feta.
